Ingredients:
1 sachet Carolina Chicken Seasoning
1 sachet Southern Slaw Seasoning,
1 sachet French's Classic Yellow Mustard
1 tbs oil
50ml water
500g chicken breast or thigh fillets
175g red cabbage, thinly shredded
1 carrot, grated
2 tbs mayonnaise or yoghurt
4 burger buns, sliced in half
Preparation Method
- Pre-heat the oven to 180°C, 350°F, Gas Mark 4. Mix the oil, Carolina Chicken Seasoning and water in a roasting dish, add the chicken and turn to coat. Cook for 25-30 mins, until cooked through.
- Meanwhile, combine the cabbage, carrot, mayo or yoghurt and Southern Slaw Seasoning in a bowl. When the chicken is cooked rest for a few minutes, stir in the French's Yellow Mustard, and shred with two forks.
- Serve the chicken in warm burger buns with the slaw and tuck in!
Notes
- For a vegetarian alternative combine Carolina Seasoning with 150ml water.
- Heat a little oil in a pan, fry a sliced onion until softened, then add 2 x 400g tins drained jackfruit. Cover and cook for 20 mins. Add the Mustard, warm through then break the jackfruit up with a fork and serve in the buns with the slaw.
